Crockpot Chicken Tacos Recipe

I am absolutely obsessed with easy and tasty recipes. I love to cook, but I find it exhausting to cook during the week. IMO it can t be ALOT to work full time, work out, maintain a house, maintain your health, maintain your sanity, and then throw cooking plus the dishes on top every day of the week…. it can be overwhelming. Can you relate?

To help with the challenge of cooking during the week, I have been loving crockpot recipes. Crockpot recipes to me are fast, efficient, tasty, and require minimal clean-up, which I love.

Here is another crockpot recipe I have to share with you. This one is perfect for a taco Tuesday (or whatever day of the week you choose) to have a yummy and efficient dinner.

Crockpot Chicken Taco Ingredients

2 Chicken Breasts

1 can of Corn (drained)

1 can of Black Beans (drained)

1/2 cup Diced Onion (if you want to make this recipe super simple, buy the onion already diced from the grocery store)

Taco Seasoning (Pick your favorite)

1 Jar of Salsa (Pick your favorite)

Optional Ingredients

Jalapenos

Additional spices (If you and your family like spicy, make it spicy!)

Green Chilies

Crockpot Chicken Tacos Directions

  1. Turn your crockpot on high, add the corn, black beans, and diced onion directly into the crockpot. Next, add the chicken breasts and taco seasoning. Last top with the salsa of choice over the chicken, and you are cooking! (Ha!)

  2. Cook on high for 4 hours then turn down to low for an hour. ( If you are going to be gone for over 8 hours, turn the crockpot on low all day and the tacos will be ready when you get home. ) You will know the chicken is cooked thoroughly when it is easy to shred apart.

  3. To shred the chicken take two forks and gently pull the chicken apart.

  4. Stir all ingredients once the chicken is shredded. Your dinner is now ready, enjoy!

What to serve with Crockpot Chicken Tacos

Taco nights are a frequent meal at my dinner table which means I have a few varieties of ways I serve my tacos. If we are keeping it super simple, I will make Elote(recipe. coming soon), and serve the tacos with tortillas, cheese, and jalapenos. Another option I like is, to make chips and guac (I think guac should be a food group, but that’s an entirely different story). I like to switch up what chips I use, and have been a really big fan of the Sieta Food Lime Tortilla Chips lately which are a healthier version than regular tortilla chips. If you’re needing more carbs. (like my partner does), I will heat up Spanish rice in the microwave (I’m all about being efficient). For me, I like to keep my tacos on the skinnier side so I typically do not eat a tortilla, I make my tacos in romaine lettuce or I have a taco salad in a bowl. ….. There are SO many options when it comes to taco night, I like to have fun with it and add a Skinny Margarita every so often. Like I say on all of my recipes, take this and make it your own.
