Crockpot Tuscan Chicken Recipe

If you follow me on Instagram, you have probably seen my Crockpot Tuscan Chicken in my stories. This dinner is a hit my home and one of my most requested recipes.

After a busy day, deciding what to make for dinner can be such a daunting task….please tell me I’m not the only one who feels this way. I really don’t know how people make dinner every night and work full time because I would probably fall asleep cooking….. can you relate? Realistically, I cook dinner 3 nights a week on average, and my Crockpot Tuscan Chicken is always in our dinner rotation. I also am a HUGE fan of using a crockpot because it’s less messy, and I can prep the meal before 7 pm when I am exhausted. Ideally, I put my Crockpot Tuscan Chicken in the crockpot around lunchtime or a little after and have minimal dinner prep to do after work which is a “win” to me.

Below is my recipe for Crockpot Tuscan Chicken, I hope you enjoy it as much as we do!

Crockpot Tuscan Chicken Ingredients

2 Chicken Breast

2 Tbsp Fresh Garlic

1 Tbsp Chili Fakes

2 Tbsp Oregano/Italian spices 

Salt & Pepper

1 cup Heavy cream

1/2 cup Chicken broth

1/2 cup Sundried tomatoes

1 Can Quarted Artichokes

Fresh Spinach - as much as you want 

3/4 Cup Shredded Parmesan

Crockpot Tuscan Chicken Directions

  1. Turn your crockpot on high, and add the chicken breast directly into the crockpot. Top the chicken with fresh garlic. We love garlic so sometimes I add more than 2 Tbsp, but do what you prefer. (If you’re heading into the office and prepping dinner before work, turn the crockpot on low and immediately turn it to warm when you get home.)

  2. Next, add the artichokes (makes sure to drain artichokes) and sundried tomatoes.

  3. Now it is time to add the heavy, chicken broth, and remaining spices. Lastly, add your shredded parmesan and spinach. I add a lot of spinach because spinach cooks up super small and added extra is a great way to add vegetables to this meal without altering the taste or requiring additional effort which is so efficient, ya know?

  4. Cook on high for 4-5 hours or until the chicken is able to shred easily and is very tender.

What to serve with Crockpot Tuscan Chicken

When deciding what to eat with your Crockpot Tuscan Chicken, there are many options. Starting with the easiest of eating it by itself. Another favorite in my home is Chickpea Pasta. As I’ve mentioned in other posts, I am not a big “pasta eater”, so a pasta alternative is a normal dinner item in my home. You could also serve this with regular pasta if that’s your thing or zucchini noodles if you are wanting to keep your dinner on the skinnier side. Ultimately, make this dinner your own and what works best for you and whomever you are choosing to share it with.
